Cavatina’s extensive wine list features Old World and New World selections with an emphasis on wines from the United States, France and Italy. In creating the American section of the list, special attention was given to our international clientele’s increasing desire to enjoy the best that California vineyards have to offer, especially some of its prized Cabernet Sauvignons such as Trefethen “Halo”, Kenzo “Aí”, Dana Estates “Hershey Vineyard”, and “Ulysees” by Christian Moueix, to name a few.
Included in the Cabernet Sauvignons and Cabernet Blends are vertical selections from Opus One, Groth, Dominus, and Alpha Omega. Also available are hard-to-find magnums from Opus One, Silver Oak, Caymus, and Jordan. And for that special occasion, choose one of our double magnums of Silver Oak, Quintessa, or Caymus’s 40th Anniversary Edition.
In addition to our stellar Cabernet selection, we offer some of the most sought-after Pinot Noirs from California and Oregon. Cavatina was the first restaurant in Southern California to carry the wines from Pahlmeyer’s Wayfarer Vineyard in the newly-established Fort-Ross-Seaview AVA. The highly acclaimed Wayfarer Pinot Noirs have such complexity that they have been compared to those of Domaine de la Romanée-Conti in Burgundy. From the Willamette Valley in Oregon, you can try Domaine Serene’s “Evenstadt Reserve”, the gold standard of Oregon Pinots. It’s worth noting that Domaine Serene’s Chardonnay was awarded Wine Spectator’s Wine of the Year in 2016.
The wines of the aforementioned Domaine de la Romanée-Conti are the most sought-after in all of Burgundy and we are pleased to have on our list the 2011 vintage of “Grands Échézeaux”. Also represented from Burgundy are wines from Bouchard, Latour and Jadot, as well as some small “domaine” rarities.
Staying in France, Cavatina’s Bordeaux selection features some of the stars of the region: Château Léoville-Poyferré, Château Mouton Rothschild, and Château Lynch-Bages. But hidden among the “big boys” is an interesting selection of off-the-beaten-track wines to be discovered.
Cavatina is a place to celebrate, so that means Champagne, and our list counts thirty-five entries in sizes from half-bottles of Billecart-Salmon Rosé to a giant Salmanazar (9 Liters) of Perrier-Jouët Brut. We carry some of the rarest top-of-the-line “cuvées” such as Pol Roger’s “Sir Winston Churchill”, Taittinger’s Compte de Champagne, and Perrier-Jouët’s “Belle Epoque” Blanc de Blanc.
